Smoked charro beans are a flavorful twist on the traditional Mexican dish, featuring pinto beans slow-cooked with smoky ingredients like bacon or chorizo, onions, garlic, and spices. The beans are often infused with rich, smoky flavors from being cooked over an open flame or in a smoker, resulting in a hearty, savory side dish that pairs perfectly with grilled meats or can be enjoyed on their own.
Ingredients
- 3 16 oz jalapeño pinto beans
- 2 16 oz diced tomatoes
- 5 slices bacon cut into pieces
- 4 pound chuck roast cubed
- 1 cup ham cut into cubes
- 1 pound chorizo
- 1/2 bunch of cilantro chopped
- 1/2 onion diced
- pepper, oregano, paprika, cumin, and salt to taste.
Directions
- Preheat the smoker to 275°F (135°C) for indirect cooking.
- Add onions in a pot or foil pan and cook until translucent.
- Add the pinto beans, and canned tomatoes to a large foil pan or 7 qt cast iron enameled pot and let cook for 5 minutes.
- Cook bacon and chorizo separately until cooked through. Add to pot or pan. BBQ Inspiration, Chuck roast is to be from leftovers or smoked separately. This is optional but you can add chopped hot dog franks as a substitute or any meat you desire.
- After about 5 minutes, add the ham, the already shredded or chopped chuck roast, and remaining seasonings into a pan or pot.
- Smoke for 2 hours until beans are softened.
- Next, scoop your delicious beans into a bowl and top with the cilantro, chopped onions, chives, and paprika.
- Serve hot as a side dish or as a main dish.
