Ingredients
- 2 lbs ground chuck
- 1 lb ground pork
- 1 egg, lightly beaten
- 3 medium red onions, diced
- 2 cloves garlic, minced
- 2 cans (28 oz each) crushed tomatoes
- 1 can (28 oz) Italian-style diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 cup beef broth or beer
- 1 can (14 oz) chili beans (optional)
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- 1 (7 oz) can adobo sauce (for extra heat, optional)
- Salt and pepper to taste
- Wood chips or chunks for smoking
- Cilantro for toppings
- Sliced jalapeño for toppings
- Shredded cheddar cheese for toppings
Directions
- Preheat the smoker to 275°F (135°C) for indirect cooking.
- In a cast-iron Dutch oven, combine onions, garlic, crushed tomatoes, beans, beef broth, and seasonings.
- Shape ground beef and pork into a large oval meatball and place it on a rack over the Dutch oven.
- Smoke for 2 hours uncovered, allowing the beef juices to drip into the chili.
- Break the oval meatball into small pieces and stir into the chili. Cook for another hour.
- Serve hot.
