Ingredients
- 36 oz elbow macaroni
- 4 cups shredded cheese (cheddar, gouda, or a mix)
- 5 cups whole milk
- 1 cup heavy cream
- 16 oz Velveeta cheese, cubed
- 8 oz cream cheese
- 12 oz can evaporated milk
- 4 eggs, lightly beaten
- 1/2 cup breadcrumbs or panko
- 1/4 cup butter
- Dash of hot sauce
- 1/2 tsp smoked paprika
- Salt and pepper to taste
Directions
- Set the oven or smoker to 350°F (176°C).
- In a saucepan, melt butter over medium heat and gradually whisk in milk and heavy cream.
- Cook until slightly thickened. Cook macaroni until al dente.
- Transfer macaroni to an aluminum pan.
- Stir in remaining cups of cheese, milk, beaten eggs, hot sauce, smoked paprika, salt, and pepper until smooth.
- Sprinkle remaining cheese on top of macaroni.
- Smoke for 1.5 hours or until golden and bubbly.
- Top with breadcrumbs or panko and cook for an additional 20 minutes if needed. Serve warm.
