We compare Texas Style vs Carolina Style pork butt on the Kamado Joe Classic 2 using the sloroller. We use SPG for Texas Style and Hardcore Carnivore Red for Carolina rub. We spritz with water the Texas Style & Carolina mop every hour until bark is set. We set up Kamado Joe for 250-275 on the grill. Watch the video
