Ingredients
12 large jalapeños
8 oz cream cheese, softened
1 cup shredded cheddar cheese
1 tbsp favorite rub
12 slices of bacon

Directions
Preheat the oven, grill, or smoker to 300°F (148°C).
Slice jalapeños lengthwise and remove seeds and membranes.
Mix cream cheese, cheddar cheese, and rub in a bowl.
Fill each jalapeño half with the cheese mixture.
Wrap each stuffed jalapeño with bacon and secure with a toothpick.
Place on the smoker and cook for 30 minutes, or until the bacon is crispy.
