Ingredients
- 2 tablespoons vegetable oil
- 1 tablespoon beef tallow
- 8 ounces cremini mushrooms
- 8 ounces sweet peppers
- 1 pound beef stew meat
- 1 large onion, diced
- 4 large cloves garlic, crushed
- 2 teaspoons minced fresh thyme
- 2 medium carrots
- 1 cup ale
- 1 tablespoon tomato paste or ketchup
- 2 teaspoons Worcestershire sauce
- 1 teaspoon Dijon mustard
- 1 teaspoon soy sauce
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 bay leaf
- 2 tablespoons cornstarch

. Sauté the Mushrooms & Sweet Peppers:
Heat the oil in a 5-6 quart pot over medium heat. Once hot, add the mushrooms, sweet peppers, and cook for about 5 minutes, stirring frequently. Transfer the mushrooms and peppers to a bowl and set aside.
- 2. Sear the Beef:
- Increase the heat to medium-high. In the same pot, add the beef stew meat in a single layer. Let it sear without stirring for about 3 minutes until caramelized on one side. Then, stir in the diced onion and cook for 2 minutes. Add the crushed garlic and cook for an additional 30 seconds, stirring constantly.
- 3. Combine Ingredients:
- Stir in the sautéed mushrooms, sweet peppers, thyme, carrots, ale, tomato paste, Worcestershire sauce, Dijon mustard, soy sauce, salt, black pepper, and bay leaf. Mix well.
- 4. Simmer the Stew:
- Bring the mixture to a boil, then cover the pot. Reduce the heat slightly to maintain a gentle boil and cook for about 30 minutes, stirring frequently, until the meat is tender and the liquid has evaporated.
- 5. Thicken the Stew:
- Stir in the cornstarch slurry and cook until the stew thickens, about 30 seconds.
