This rich and creamy cheese dip is infused with smoky flavor and loaded with hearty ingredients like tomatoes and peppers. Perfect for dipping tortilla chips or drizzling over nachos, it’s a crowd-pleaser at any gathering. Once you try this smoky version, traditional queso will never be the same!
Ingredients
- 1/4 block Velveeta cheese, cubed
- 1 cup shredded sharp cheddar cheese
- 1 cup pepper jack cheese
- 1/4 cup half and half
- 8 oz cream cheese
- 1 can cream of mushroom
- 1/2 lb ground sausage, cooked
- 1/2 cup diced tomatoes with green chilies (e.g., Rotel)
- 1/4 cup diced jalapeños
- 1/4 cup diced onion
- 1/2 cup milk
- Tortilla chips for serving
Directions
- Preheat the smoker to 250°F (121°C).
- Lightly oil your pan and brown ground sausage or beef in a cast iron pan.
- Add chopped onions, garlic, jalapeños, tomatoes, and cook until onions are translucent. Add remaining cheese ingredients and liquids.
- Place the skillet in the smoker and cook for 1.5 hours, stirring every 15 minutes, until the cheese is fully melted and combined.
- Serve warm with tortilla chips.
