These visually stunning potatoes are sliced but not all the way through, allowing for a perfect crispy exterior and a fluffy interior. Ingredients
- 5 medium-sized potatoes
- 3 tbsp olive oil
- 2 tbsp melted butter
- 4 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup grated Parmesan cheese
- 1 tbsp chopped fresh parsley (optional)
Directions
- Preheat the oven or smoker to 425°F (218°C).
- Place each potato between two chopsticks and make thin slices about ¾ of the way down.
- Mix olive oil or butter with minced garlic, salt, and pepper.
- Brush the mixture over the potatoes, ensuring it gets into the slices.
- Bake for 45 minutes. Remove and sprinkle with Parmesan cheese.
- Return to the oven or smoker for another 15 minutes, or until golden and crispy.
- Garnish with parsley before serving.
