Ingredients
- 1 whole chicken (4-5 lbs)
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/2 tsp black pepper
Directions
- Preheat the oven or smoker to 400°F (204°C).
- Using kitchen shears, remove the chicken’s backbone and press it flat.
- Rub the chicken with olive oil and season with garlic powder, smoked paprika, thyme, salt, and pepper. Use any of my rubs as a seasoning.
- Place the chicken on the grill and smoke for 1 hour or until the internal temperature reaches 165°F. For extra flavor, baste chicken with your favorite sauce at 150°F internal temp and then cook until 165°F internal temperature.
- Rest for 10 minutes before slicing.
