This technique involves removing the backbone of the chicken, allowing it to cook evenly and quickly on the grill or in the oven. The result is a juicy, flavorful bird with crispy skin. Serve it with your favorite sides for a perfectly balanced meal!

Ingredients

1 whole chicken (4-5 lbs)
2 tbsp olive oil
1 tsp garlic powder
1 tsp smoked paprika
1 tsp dried thyme
1/2 tsp salt
1/2 tsp black pepper

Directions

Preheat the oven or smoker to 400°F (204°C).
Using kitchen shears, remove the chicken’s backbone and press it flat.
Rub the chicken with olive oil and season with garlic powder, smoked paprika, thyme, salt, and pepper. Use any of my rubs as a seasoning.
Place the chicken on the grill and smoke for 1 hour or until the internal temperature reaches 165°F. For extra flavor, baste chicken with your favorite sauce at 150°F internal temp and then cook until 165°F internal temperature.
Rest for 10 minutes before slicing.
