These bite-sized pieces of pork belly are slow-cooked until tender and then caramelized with a sweet glaze. They’re a decadent treat that’s perfect for gatherings or as a rich appetizer. Prepare to be amazed by the melt-in-your-mouth texture and bold flavors!
Ingredients
- 2 lbs pork belly, cubed
- 1/4 cup brown sugar
- 2 tbsp Sweet Red Dirt Rub
- 1 tbsp honey
- 1/2 cup BBQ sauce (Heartland Hickory Cherry Sauce)
Directions
- Preheat your smoker to 250°F (121°C)
- Start by cutting the belly into 1-2 inch cubes. In a large bowl, toss pork belly cubes with Sweet Red Dirt rub.
- Arrange the cubes on the smoker rack and cook for 2 hours.
- Transfer the pork to a foil pan, coat with BBQ sauce, brown sugar, honey, and mix. Cover the pan with foil.
- Return to the smoker for another hour until tender and caramelized. It should be around 195-200°F internal temperature.
