These bite-sized pieces of pork belly are slow-cooked until tender and then caramelized with a sweet glaze. They’re a decadent treat that’s perfect for gatherings or as a rich appetizer. Prepare to be amazed by the melt-in-your-mouth texture and bold flavors!

Ingredients

2 lbs pork belly, cubed
1/4 cup brown sugar
2 tbsp Sweet Red Dirt Rub
1 tbsp honey
1/2 cup BBQ sauce (Heartland Hickory Cherry Sauce)

Directions

Preheat your smoker to 250°F (121°C)
Start by cutting the belly into 1-2 inch cubes. In a large bowl, toss pork belly cubes with Sweet Red Dirt rub.
Arrange the cubes on the smoker rack and cook for 2 hours.
Transfer the pork to a foil pan, coat with BBQ sauce, brown sugar, honey, and mix. Cover the pan with foil.
Return to the smoker for another hour until tender and caramelized. It should be around 195-200°F internal temperature.
