Smoked Bacon & Egg Cups

Ingredients

1 spray Nonstick cooking spray, such as PAM

Smoked bacon
-
6 large eggs
-
Shredded cheddar cheese
-
Bartlow’s BBQ All Y’all Seasoning, to taste

Fresh chives, chopped
Directions
Preheat the smoker to 300°F.
Spray 6 cups of a cupcake or muffin pan with nonstick cooking spray.
Line each prepared cup with smoked bacon, forming the bacon around the inside of the cup.
Crack 1 egg into each bacon-lined cup.
Season the eggs with Bartlow’s BBQ All Y’all Seasoning.
Sprinkle shredded cheddar cheese over the top.
Finish with chopped fresh chives.
Place the cupcake pan in the smoker and cook at 300°F for 25–30 minutes, or until the bacon is cooked and the eggs have reached your preferred doneness.
Carefully remove the pan from the smoker. Let the cups rest briefly before removing them from the pan.
Serve warm and dig in!

Recipe Note
Watch the eggs during the last few minutes of cooking. If you like a softer yolk, pull the cups earlier. For firmer eggs, let them smoke closer to the full 30 minutes.
