Regular-cut bacon bacon

Bartlow’s BBQ Sweet Red Dirt

Brown sugar

Mike’s Hot Honey

Jalapeños, thinly sliced
Directions
Preheat the Kamado Joe to 400°F.
Arrange the bacon on a sheet or rack that allows good airflow.
Lightly coat the bacon with Bartlow’s BBQ Sweet Red Dirt.
Sprinkle lightly with brown sugar. The rub already contains brown sugar, so you don't need much.
Drizzle a thin strip of hot honey down the center of each bacon slice.
Top with thinly sliced jalapeños. For less heat, remove the seeds and/or center portion.
Cook at 400°F for 10–12 minutes, until the bacon is rendered, glazed, and caramelized.
Remove carefully, allow to cool slightly, and serve.

Slice the jalapeños thin for more of a candied texture.
Removing the seeds reduces the heat.
